Beurre Noisette (in French... ooh la la) is the flavor profile we try to reach. Browning butter imparts a rich, nutty flavor to the butter. Whole pecans are double toasted in our ovens. Double toasting the pecans prevents the nuts from getting soggy in the ice cream.
