Oatmeal Coconut Cream Pie (V)

How it’s made:
A gluten free and dairy free (ostensibly vegan, without the official vegan certification) is baked in our hot kitchen.  We then make an oatmeal cookie (oats toasted with brown sugar caramelize into a crispy treat), and these are broken apart.  The pieces then get mixed into a vanilla-kissed coconut milk after freezing.
